I love fried suluguni cheese very much. In general, ideally, it would be nice if the cheese was smoked, you don't even need to roll it in flour. But, unfortunately, we do not sell it, and it appears with me only after trips to Georgia.

I like to pamper loved ones with suluguni in pita bread. In nature, you can cook this dish on the grill. I have a grill pan at home. Ribbed like that. I will not give the exact weight of the products. Everything "by eye".

  • half a kilo of suluguni
  • 3-5 sheets of thin pita bread
  • 3-4 tomatoes
  • a bunch of cilantro, dill and parsley / the more herbs, the better /

Grind the suluguni. Cut into small cubes.

Finely chop the greens. Mix with shredded cheese.

Peel the tomatoes. Cut into rings. Add a little bit.

Cut the lavash sheets in half.

Put 2-3 cups of tomato on pita bread. Place it 1/3 from the edge.

Pour a couple of cheese with herbs on top.

We turn it into an envelope. A la shawarma.

Place in a preheated frying pan WITHOUT oil, seam down.

We fry for a minute or two. How to "grab", i.e. pita bread will harden - turn it over.

Recipe 5: Suluguni fried in pita bread: the easiest recipe

A Georgian woman told me how to use lavash and suluguni correctly. It is necessary to cut off a piece of pita bread, wrap it in an envelope (I could not imagine an envelope made of pita bread). In a dry frying pan, fry pita bread with suluguni over medium heat until a crust appears.

I took the liberty of modernizing this dish a bit. I bought cilantro and tarragon (aka tarragon and trachun herb, as one friend of mine says).

I cut the pita sheets into 4 pieces. From a piece of suluguni cut slices of 20 grams. Finely chopped greens.

I lit a medium fire in my stove, put the pan on, warmed it up properly. And smacked on her "envelopes" of lavash.

I fried it. The whole process took about 5 minutes. I turned it over 2 times. As soon as the melted suluguni began to stand out from the cracks in the envelopes, I stopped the process. I threw the resulting product into a plate and waited for it to cool down a little.

The result is excellent buns! A very cool appetizer.

Preparation

Tip: It is preferable to use olive oil with the category "Pomas", on which the suluguni will not burn.

Before frying, the cheese is cut into centimeter-thick cubes. Fry on both sides of the bars.

In flour

To fry 300 grams of cheese, you need to take: half a teaspoon of paprika, 2 or 3 tablespoons of flour, half a teaspoon of pepper mixture from a bag.

Cutting the suluguni into slices, dip it in a mixture of flour with seasonings, lay it out in a pan, preheated and oiled with oil. You need to fry for about 40 seconds. On the one hand, and the same amount on the other. After removing the product, it is immediately served independently. Together, you can eat vegetables, especially tomatoes, various herbs, as well as boiled chicken eggs.

To prevent the suluguni from spreading in the pan, it is fried for 30 or 40 seconds. on both sides in case of strong fire without a cover.

A simple and dietary suluguni recipe without breading is called the "Poet's Dream". From the ingredients you need: 300 or 400 grams of suluguni, a little olive oil, any spices and spicy herbs.

Butter is poured into a frying pan, warmed up, it is good to throw rosemary and thyme twigs (whole) into it, which will give the oil a unique aroma. If fresh herbs are not available, then spices and basil are poured.

Then cheese bars are laid out. Fry both sides for a few seconds. You don't need to bake too much. If you notice a slight browning, you should turn the piece to the other side. Suluguni can be put on the table directly in a frying pan, consumed hot, slightly melted, uncured.

Suluguni goes well with a sauce, for which ghee is mixed with cilantro and a couple of minced garlic cloves.

Breaded

Before frying, the cheese is breaded. A chicken egg is beaten, sprinkled with spices, everything is mixed. Pieces of 2 by 4 cm are cut, the thickness should be no more than one, so that the product is easily fried, and the inside is juicy and soft.

The bars are dipped in an egg, and then in crackers, poured in a separate bowl. To achieve an even layer, the procedure is repeated one more time, and again, only 3 identical breading steps.

You need to fry the product in refined sunflower or corn oil, a third of the pieces should be drowned in it. You should also not overheat the oil, so as not to burn off the sprinkling, and the products do not remain damp from the inside.

Frying breaded suluguni takes about a minute per side. The finished products are laid out on a napkin to remove excess fat. Put on a plate, put on the table with cucumbers, tomatoes and lettuce. Can be drizzled over with any sauce you prefer. It is better not to leave the product in a frying pan, so as not to drip.

You can add a flavorful dressing to the recipe. For example, stir adjika and tomato paste (1 or 2 teaspoons each) with an egg, complete the composition with nutmeg, basil and rosemary.

Breaded

Suluguni turns out to be very appetizing if you prepare beer batter for it. From the ingredients they take: wheat flour (250 grams), 300 grams of suluguni, a couple of eggs, dark beer (200 milliliters), some spices and vegetable oil.

Suluguni is cut into medium-sized pieces or bars. The testicles are shaken with a whisk. Salt is not allowed in cooking. Pepper the egg mixture and pour in beer, stir and add flour at once.

While the pan with butter is heating up, the pieces need to be dipped in the batter. Fry properly in hot fat until the dough is golden brown. The finished product is laid out on paper towels to absorb excess oil.

Instead of flour, they sometimes use ground oatmeal, bran, or chopped corn grits.

In pita bread

Georgian cuisine is rich in inventive recipes. For example, a small piece is cut from a pita sheet, from which an envelope is wrapped. It is filled with cheese, cut into pieces or bars. Lavash with suluguni should be fried in a frying pan without oil until a golden brown crust appears, while the fire is set to medium. They get a delicious and easy-to-prepare snack.

You can cut the pita bread into four pieces. Twenty-gram chunks are made from the cheese. Sprigs of greenery are crumbling finely. Wrap the ingredients in a piece of pita bread. Fry the resulting squares for 5 minutes, turning over a couple of times.

Another recipe is a little more complicated. For half a kilogram of cheese you need: thin lavash sheets (from 3 to 5), 3 or 4 tomatoes, cilantro, dill and parsley in bunches.

The cheese is cut into small cubes, and crumbled sprigs of greens are mixed with them. The skin is removed from the tomatoes. Divide them into rings and add a little salt. Each loaf of bread is divided into 2 parts. Stepping back a little from the edge, place 2 or 3 tomato circles on a leaf, sprinkle them with a pinch of herbs and cheese pieces. A semblance of shawarma is wrapped. The pan should be dry and hot. The products are stacked so that the seam is at the bottom. Fry both sides for about a couple of minutes.

With cheese

Cheese breading makes suluguni a doubly incomparable delicacy. To fry a meal, you will need products: white croutons (a full cup), grated Parmesan (30 grams), suluguni (600 grams), a couple of eggs, half a cup of flour, a little ground paprika, black pepper and butter.

Suluguni, cut into pieces or bars, is alternately dipped in flour, in a stirred egg, in a mixture of parmesan, croutons and spices. Fry the product on a heated oil on both sides until a crust appears.

Cheese in beer batter

Cheese in beer batter is very popular in Bulgaria. It can be served as a beer snack or as a side dish for a main course. You can serve tomato or garlic sauce with this appetizer.

  • 350 gr. feta cheese;
  • 50 ml soy sauce;
  • 2 tablespoons flour;
  • 1 egg;
  • 1 glass of beer;
  • vegetable oil for deep fat.

To prepare this appetizer, you need fresh feta cheese. If you bought too salty feta cheese, then you must first soak it in cold water, periodically changing the water. The soaking time depends on the salinity of the cheese. To make the feta cheese quickly acquire the required taste, it is cut into pieces before soaking.

Put pieces of feta cheese on a plate and pour over soy sauce, mix gently. We leave for 10-15 minutes.

Break the egg into a separate bowl, beat it. Pour in beer, mix. Add flour little by little and knead until the lumps disappear.   • 50 gr. butter;
  • 450 ml of water;
  • 500 gr. flour;
